There are two things to track for each sprite. Owning means you've unlocked it. Mastering is the next step, showing you've fully leveled it up. The tracker keeps these separate so you can see, at a glance, both how complete your collection is and how many sprites you've taken all the way to mastered. The header shows your owned count and your total mastered stars.
